Peas and Bacon with Potatoes - Guisantes con Jamon

This simple and easy dish comes together very quickly. It might even be called a peasant dish because the ingredients are inexpensive and easy to grow in rural Spain. It’s a traditional, late night supper in Spain when you want to ensure a good night of sleep before or after a night of socializing. The “Jamon” or bacon, is absorbed into the potatoes infusing them with flavor. The peas add a touch of freshness and crunch. The fried egg is the ultimate topping on a late-night comfort dish; but it’s good any time of day or night.
