Citrus Olive Oil Muffins

These moist little packets taste like a bite of summer in the Mediterranean. They are made with a copious amount of Olive Oil and Orange zest. I wish I could take credit for creating these, but if you have ever been to Tender Greens, you would have seen the mini Olive Oil Cakes, sitting humbly in the dessert case, calling no attention to themselves. Hopefully you indulged, because this cake is not to be missed. The recipe was printed in the LA Times a few years ago, and these have been part of my baking repertoire ever since. Enjoy them on a sunny summer morning, or bring some summer to the gray days of fall or winter with these yummy little cakes. They pair equally well with coffee or champagne.
