Mexican Rice

Rice…what a wonderful “carb”, and how complicated it can be. What would Chinese food be without rice? Indian food? How about Iconic foods where rice has the lead role? Sushi, Paella, Risotto, Rice pudding…the list goes on. But, there is also the question of what makes perfect rice? For every culinary rice dish, the definition of “perfect” is different. Risotto is creamy, Paella is loose and crunchy, Fried rice is fluffy and loose, Sushi rice is sticky. When you shop for rice at a supermarket, think of all the varieties you come across; long grain, medium grain, short grain, Basmati, Jasmine, wild rice, black rice….and more. It took me a long time, and a lot of mushy and burned rice to break the code on perfect Mexican rice. I’m not saying I’m an expert at making all rice, but I can help you make perfect Mexican rice, every time.
