Corn Zucchini Confetti

This ultra simple summer corn recipe comes together in minutes, versus a corn casserole which requires more prep time and oven time. It’s a great summer treat when corn and zucchini are at their peak. The addition of red peppers gives it a pop of color and extra summer flavor, and the addition of potato gives it enough body to be a light main course. It is also a perfect side to have with Tacos, Chile Rellenos, grilled steak or chicken. If you don’t have a chance to make it in the summer when ingredients are at their peak, it is also good with frozen corn to be enjoyed year-round.
