Hummus Salad

This perfect side dish becomes a satisfying mid-day meal or light dinner with the addition of vegetables, leafy greens, herbs and spices. In my sister’s home when we had hummus it was always accompanied by humble sliced vegetables which became great sandwiches when paired with hummus. This salad is the cousin to that concept, but I highly recommend the toasted pita bread. For a low-carb option, scoop up the goodness with romaine leaves, or use the romaine as a bed for the other vegetables. Any way you decide to plate it, it is a healthy, beautiful and satisfying salad.
