Weeknight Sheet Pan Meal

This weeknight sheet-pan meal was made with Italian sausages, red peppers, fennel and onion.

If you have chicken, fish or sausages and vegetables, you’re almost there. This is one of the easiest ways to prepare a meal and requires no technique. The three components are Vegetables, protein, and seasoning. Just cut and season the vegetables and protein, then pop into the oven at 375 degrees for about 45 minutes.

I’ve been making sheet pan meals for years, but never thought to post a recipe, because there is literally no recipe. This is a “set it and forget it” meal I would throw together when I would get home from the office. It can be made with any variation of chicken, fish, sausage, pork or beef. The creativity in this meal comes from the assortment of veggies that accompany the protein and the spices used for seasoning. 

My go-to protein is boneless chicken, but I often have Italian sausages or salmon filets which are wonderful too. For me, the veggies are the star in this dish, and I like to make it veggie heavy. My veggie drawer always has red peppers, onions and tomatoes, so that is my standard. Slice the veggies and protein so they cook at approximately the same time, dress with olive oil, salt and pepper. If you want to go further, use some “fine herbs”, or fresh rosemary, thyme or oregano.

The beauty of this simple meal is to use what you have; sweet potatoes, leeks, fennel, zucchini, carrots...the list is endless. The herbs and spices can take it to another place. Smoked paprika in the mix takes me right to Spain. It’s impossible to go wrong. I recently had a group of friends over for a BBQ, only the BBQ wasn’t working, so I popped everything in the oven that would have been grilled, made a big pot of white rice, and it was brilliant.
