Strawberry Tiramisu

This lovely pink layered tiramisu can be made with strawberries or raspberries. It’s a tiramisu in that it has layers of dipped ladyfingers, and layers of creamy mascarpone. But, in this version, I’m replacing the eggs with a mascarpone and whipping cream for very stable cream layers. And, instead of dipping in espresso, we’re dipping the ladyfingers in strawberry syrup. The addition of the biscuits wrapped vertically around the dessert give it the look of a Charlotte. 

It’s a great dessert for summer or for Valentine’s Day or anytime pink is preferred.
