Pozole Verde - Green Chicken Pozole

This should really be called the Party Pozole because it lends itself to large parties and gatherings. When the broth is simmering and the chiles are charring, a neighbor is bound to show up asking what’s for dinner. This is the sister recipe to the red pozole which you can read about here. They are both easy, but this green recipe is made from a green chile base which you make in a blender. I find that I prefer the green pozole in warmer weather. It has a brightness to it which is due to the fresh cilantro and tomatillos which form the green base, and when loaded up with all the toppings, it looks like a bowl of spring. The recipe can easily be doubled and tripled for a large party and served in mugs with all the accoutrements lined up for garnishing. I hope that you take the additional time to fry the tortilla chips, or buy fresh ones from the supermarket rather than the bagged variety. What makes this soup so delicious is all the layering of flavors and toppings, so try not to take any shortcuts, but if you must look for my shortcut noted at the end of the recipe. Enjoy!
