Chicken Milanesa

I have an obsession with crispy foods. Savory or sweet, I love the bite and the crunch, especially when the crispy bite is followed by a soft, juicy or creamy inside. This chicken Milanesa recipe delivers the crisp factor followed by a juicy, succulent bite of chicken. It’s as close to fried chicken as it gets but no deep frying is required to deliver the crusty cutlet.

I never really had chicken fried this way until my Spanish mother-in-law made it for me. It’s quite popular in Spain. My grandmother always made fried chicken, and if I’m honest, that is my absolute favorite, but sadly, I have not perfected a foolproof fried chicken recipe (but i’m working on it). This recipe delivers all the best parts of fried chicken but it’s easier because there is no deep frying and because the chicken cutlets are pounded out very thin, they are cooked through quickly.

It’s one of my standard weeknight meals, served with either arugula in a lemon vinaigrette or green vegetables for a nice balance.
