Mexican Wedding Cookies

The little snowballs are ready to be packaged up for neighbors or packed into your favorite cookie tin, ready for you to have with your afternoon coffee or tea.

These delectable little snowballs are one of the easiest cookies you will ever make. Three key ingredients; flour, sugar, butter, combine to make these far greater in taste than the sum of their parts. They are called Mexican Wedding Cookies, but they are called polvorones in Mexico and were introduced there courtesy of the Spaniards. They also have a first cousin in the Middle East. My sister, who is a fabulous cook, specializing in Lebanese delicacies, makes these for friends and neighbors over the holidays. It is hard to resist eating half a dozen at once, but as easy as they are to make - go for it. You can whip up a batch in 20 minutes, from start to finish. Like many of my recipes, a little creativity can yield many variations on the basic recipe. Think almond, orange, lavender, rose, thyme or rosemary. Be sure to make a double batch, you won’t regret it!

You can also roll this dough out to make different shapes.
