Gazpacho Salad

What could be better in the summer than an ice cold gazpacho soup? How about gazpacho salad? Use the same ingredients that go into the Spanish summer elixir and chop instead of blend. Use a simple extra virgin olive oil and vinegar vinaigrette to dress it. This is a great side, or even a light summer meal all by itself. If you want to serve as the main dish, you can add extras like shrimp, feta cheese, olives, and herbs, think mint or basil. Dressed up or at its simplest, it’s a refreshing way to eat your veggies, and no cooking - at all! Enjoy!
