Chicken Pot Pie

It’s clear that I love things wrapped in pastry, and of the many pastry laden wonders I love, few are as iconic as the Chicken Pot Pie. Americans have adopted this crispy dough wonder as our own although its origins actually date back to ancient Egypt and Greece. However, it’s the Romans we have to thank for adding the coveted top crust. Up until then, the pies were only bottom crusted. Today, many versions of chicken pot pies have a beautiful top crust, and no bottom crust. When I was a little girl, individual frozen pot pies were very popular and they were the perfect weeknight food for my sister and I when we were left to our own devices. That was before microwaves were invented, so we would sit for at least an hour waiting for the little pies to be ready. We would dig in, scalding our mouths, but not caring because the anticipation of the wait was unbearable. We were never disappointed.

My pot pie is a double crusted pie because, I am the crust person. The crust can be a “pate brise” (my favorite which is included in this recipe), puff pastry, store bought pie dough or even canned dough can be adapted in a pinch. However, if you have the time and patience, I highly recommend you make your own crust. It is so delicious and you will feel a genuine sense of accomplishment when you dig into this double crust wonder.

For the filling, we tend to think of chicken, but any number of meats and vegetables are delicious. Once you have the formula for the gravy-like consistency, you can add any meats or vegetables you fancy. My twist, is that I use fennel and leeks, and don’t add potatoes. If you want more chicken, this recipe can absolutely take an extra dose of chicken without losing the flavor integrity. These are options you get to determine when you make it your own. Last Thanksgiving, my daughter and I made a pot pie from the leftover turkey. My daughter thought it was a great idea to add the leftover dressing, which we did, and it was fabulous served with the cranberry sauce on the side.

Few things say “comfort” like a chicken pot pie. I’m pretty sure you won’t be disappointed. Enjoy!
